YIELD: 4 SERVINGS
COOK TIME : 30 MINUTES
1 lb Brussels sprouts, cleaned and halved
2 tbsp extra-virgin olive oil
Freshly ground black pepper
½ c balsamic vinegar
2 tbsp honey
1 tbsp Dijon mustard
2 cloves garlic, minced
In a large bowl, toss Brussels sprouts with oil.
Season with salt and pepper.
Make sauce: To a small saucepan, add vinegar, honey, mustard, and garlic and whisk to combine.
Bring to a simmer and cook until thick and syrupy, 5 to 8 minutes.
Add half the Brussels sprouts to basket of air fryer and cook at 400° until golden, about 10 minutes.
Pour over half the sauce and stir to coat.
Cook 5 minutes more, or until Brussels sprouts are glazed and sticky.
Repeat with remaining Brussels sprouts and sauce.
