Healthy Baked Oatmeal

  • 2 cups old-fashioned oats

  • 1 Tbsp sugar

  • 1 tsp baking powder

  • 2 tsp cinnamon

  • 1/8 tsp salt

  • 2 ripe bananas, mashed

  • 1 ½ cups milk*

  • 2 eggs, beaten

  • 1 tsp vanilla extract

  • ½ cups chopped nuts or mini chocolate chips, if desired

  • Add ins: I did a 1/4 cup chopped walnuts and a little less than 1/4 of unsweetened dark chocolate. Feel free to use your favorite add ins.



  1. Preheat oven to 350° F.

  2. Grease a 9x9 inch or 7x11 inch pan.

  3. In a medium bowl, combine the oats, sugar, baking powder, cinnamon, and salt.

  4. In a separate bowl, mash the bananas.

  5. Then add the beaten eggs, milk, and vanilla and mix well.

  6. Pour the liquid mixture into the oat mixture and stir until combined.

  7. Also add nuts or mini chocolate chips, if using.

  8. Pour into the prepared glass pan and bake for approximately 35-40 minutes.

  9. The top should be golden brown and the middle should be set.

  10. Let cool slightly and enjoy plain, with extra toppings, or with milk.
