For the sandwich
3-4oz chicken breast, cubed
Chicken spiedie marinade from wegmans (or your favorite marinade)
4-6 inch sub roll
1 T of olive oil
1 T of butter
1/2 tsp of minced garlic or 1 garlic clove
FOR THE GREENS:
2 cups spinach
1 T olive oil
1 tsp of salt
1 tsp pepper
1 tsp of garlic powder
Place chicken in a plastic bag or bowl and pour enough marinade in to completely cover the chicken.
Refrigerate for at least 30 minutes and up to 24hours.
Once chicken is marinaded to your liking, remove from refrigerator and heat medium sized pan on medium heat.
Add one tablespoon of olive oil to pan.
Add chicken to pan and flip cubes every 2-3 minutes.
Cook 5-7 minutes, or until entirely chicken is cooked through.
Slice roll in half.
Place butter in microwave safe bowl.
Add minced garlic to bowl with butter and microwave 30 seconds, or until butter is melted.
Spread melted butter along both sides of roll.
Broil roll in oven for 1-2 minutes, or toast roll face down on separate medium sized pan for 1-2 minutes, or until roll is light brown.
Remove roll from heat, add cooked chicken to roll, and pair with your favorite vegetable!
For the Greens:
Heat oil in a medium-sized pan.
Add spinach, salt, pepper, and garlic powder to heated pan.
Stir spinach occasionally for a total of 5-7 minutes, or until spinach is cooked thoroughly.
Serve with entree! Also feel free to add more or less seasoning as preferred
